Cherry Tree Smoked Octopus with Homemade Romesco Sauce

I luckily got a beautiful octopus from a fishmonger which is my faouvrite.

Cleaned it with traditional Japanese culinary methods before the proper cooking.

Then cooked in a pressure cooker and smoked with cherry tree chips.

Served with homemade romesco sauce and parsley oil.

The octopus that was cooked in pressure cooker was super soft and tender, almost we don’t need a knife, truly.
We really appreciated this amazing harvest from nature.
