Ebi Mayo Salad (Pan-fried Tiger Prawn with Mayonnaise Sauce), O-shiruko (Sweet Porrige of Azuki with Mochi)

When we are really busy and don’t have enough time to cook foods, I choose the super quick cooking meal.

Ebi Mayo is another very popular Japanese home-style food, but mine is twisted with healthier ingredients.
You might have known that Mayonnaise is high calories despite it is tasty (I LOVE mayonnaise!), so I use half amount of mayonnaise from the usual recipe and alternatively use Saikyo white Miso paste and Yogurt.

So, it is lighter and feel our palate is cleaner but taste is deep as Saikyo white miso works well 🙂

Then I served with lots of vegetables as well, so this is all-in-one meal!

Set a small dessert, O-shiruko, that is my family’s favourite.

Homemade Mochi is the best, naturally chewy and I can adjust the sweetness.

Ok, now I have to start preparing for tonight’s dinner!
