Homemade Yomogi Nama Yatsuhashi よもぎ生八ツ橋

Yomogi, Artemisia princeps, is a Japanese herb that is a very traditional ingredient for Japanese sweets Wagashi, and also it used to be used for medical effect in old times. It’s season is just now, from March to May around. That is an enough reason to make a Yomogi sweet at home!
And Nama Yatsuhashi is Kyoto dessert that is well-known over Japan and I’m a huge fan for it.

Springy but so sleek texture of fine layer of Mochi and the combination of flavour of Anko (sweet red bean paste) and very green Yomogi is perfect.

This was the first time to eat Nama Yatsuhashi for my sons and they absolutely loved it!
