Butter Sauteed Sole with Caper Mint Sauce

It was another training for the kids to eat fish fillet that contains bones 🙂

This was sole that is called Karei in Japan.
Karei is expensive fish in Japan because it is so nutritious but less fat and cholesterol, that means very healthy for us particularly for older people.
Using this fish, I made a fusion dish, Butter Saute Sole with Caper Mint Sauce.

I cured the fish using traditional Japanese cuisine and cooked with French method.

In authentic French cuisine, they never serve a side dish using fresh Wakame, but this was fusion, so should be ok!
