Homemade Kombucha Marinated Mackerel (Shime Saba しめ鯖) with Raspberry Sauce

Some raspberries I bought the other day were so sour that it was hard to enjoy, then I invented the sauce using them for the traditional Japanese food.

Here is my homemade Kombucha 🙂

This is a super natural and organic drink for my every morning. The taste is sour by the fermentation but naturally sweet by organic cane sugar.
Then I cleaned fresh mackerel at my kitchen and marinated the fillets in Kombucha.

Tada!
This is the twisted Shime Saba with Raspberry Sauce.

Nicely fatty mackerel that was dressed by sweet and sour sauce was really good.
