Ajoblanco y Salteado de navajas con salsa picante

Ajoblanco is one of the typical Spanish food and its name captures everything: ajo -> garlic, blanco -> white

It is served as a cold soup and simply consisted of Spanish almond, garlic, vinegar, a piece of bread and almond milk. However I’m in KETO life, hence a piece of bread is not perfect, so I alternatively added a roasted aubergine except its skin.

Therefore, the soup is so creamy and flavourful (& of course healthier!)

The razor clams were cooked with olive oil, garlic and chilli which is called Olio di peperoncino in Italian.

That is even my kids’ favourite food 🙂
