Baby Squid Okowa

Okowa おこわ is a Japanese steamed rice dish made with glutinous rice mixed with meat or vegetables. Originally glutinous rice is steamed but nowadays we can call it Okowa using not only steaming method but also simmering.
Also there are various choices for fillings and flavours, we chose squid on that day. The basic seasoning for rice were Kombu (kelp), soy sauce, Sake and Mirin, however we should have said that a king of flavour was from squid!
Umami from the fresh squid was simply delicious!

Minced Yuzu zest is the good hidden flavour.

Another Yuzu magic was stir-fried Dou Miao, oyster sauce.

Silken Tofu with Tuna
