Homemade Shio Koji (fermented rice) Marinated Smoked Toro Salmon & Aji (horse mackerel)

This is our home-made Shio Koji and garlic Soya sauce Koji.

Our lovely customers kindly shared the recipes and I was super excited to grow them.

They are not only tasty also so useful for adding extra flavour and nutritions!

This time, we marinated Toro Salmon (belly) and horse mackerel with them.
Very oily salmon fits Shio Koji and the sharp taste of horse mackerel is perfect with garlic soy Koji.

After marinating them, I smoked with apple tree chips.

Smokiness is always draw my appetising.

The salmon is half-cooked and half-Sashimi and melt in your mouth.

The effect of Garlic Soy Koji removed the sharp taste of horse mackerel and turned them into tasty flakes.

Garlic Fried Rice using the garlic soy Koji and marinated mushrooms salad were at the side.

Not surprised to see the kids’ enthralment!

Modest start turned into crazy excitement!
