Charred Marinated Cornish Mackerel Salad, Ponzu Dressing, Kelp flavoured Cream

These marinated mackerel called Shime-Saba are blow torched just before serving, so only surface is warm and the deep flavours of mackerel melt out into your mouth soon after your munching. 
This is a super traditional Japanese tasted dish.

I will put this dish on my menu of my pop-ups in next year.
