Japanese Dashi Soup, Charred Cornish Seafood with Echire

We feel really blessed with such beautiful, crisp winter days here in Cornwall. 

For keeping us warm and healthy, I chose a soup that contains a high good nutritions based on Japanese Dashi.   

I lightly charred fresh Cornish seafoods with Echire butter in advance, and then mixed them with a Japanese Dashi (made of Kelp and Smoked dried bonito) soup at the last minute.
The seafood that are not heated too much are so tender and clean!
By sprinkling a Japanese Chilli Oil what I made, more deep flavour does burst in my mouth.   

Perfect dish for a winter dinner.
