Dry aged Wagyu (Japanese cow)

This is Wagyu meat which was  just delivered to my kitchen.
What an exquisite appearance!
This intricate marbled layers of fat produces a tremendously tender and deep flavour.

I will serve this beauty at the Japanese Supper Club at The Hidden Kitchen this weekend.
