Stir fried Pork, Bitter gourd, Tofu and Egg (ゴーヤチャンプル)

This is a typical local food of Okinawa island, the most southern island of Japan, and one of my favourite taste.  
 This home style food is easy & quick cooking and takes only 20 minutes!
​Also Okinawa island is famous for the highest average number of the aged population all over the world.
So this would be healthy and high nutritional food as their iconic food.  
And I served homemade Kimchi which is my husband’s favourite alongside also.
It must be good for my children to know authentic Japanese taste.
Right, this weekend is a long weekend with a Bank holiday on Monday.
I’m ready for having a family time.
